Shipping Details
To maintain freshness, all cold-packed items are shipped Monday through Thursday via expedited service (1–2 day transit). Orders placed after 12 PM CT on Thursday, as well as on Friday or over the weekend, will be processed and shipped the following Monday. This schedule prevents extended transit times and ensures your order arrives in optimal condition.
If a combined order includes wine, the shipment will be split and delivered separately. Cold-packed items will ship via expedited (1–2 day) service, while wine will ship via standard delivery with adult signature required upon delivery. These shipments may arrive on different dates unless part of a designated gift or curated set.

BMS SCALE
The Japanese Beef Marbling Standard (BMS) measures the amount and quality of intramuscular fat, or marbling, in Wagyu beef on a scale from 1 to 12. Higher BMS scores indicate more abundant marbling, resulting in greater tenderness, richness, and the signature melt-in-the-mouth texture prized in Japanese Wagyu.
The BMS score also corresponds to the official Japanese quality grades from A1 to A5. While the letter grade (“A”) represents yield quality, the numeric grade reflects overall meat quality and marbling. Premium Japanese A5 Wagyu typically falls within BMS scores 8–12, with BMS 11–12 representing the highest level of marbling and luxury.
