BMS SCALE

The Japanese Beef Marbling Standard (BMS) measures the amount and quality of intramuscular fat, or marbling, in Wagyu beef on a scale from 1 to 12. Higher BMS scores indicate more abundant marbling, resulting in greater tenderness, richness, and the signature melt-in-the-mouth texture prized in Japanese Wagyu.

The BMS score also corresponds to the official Japanese quality grades from A1 to A5. While the letter grade (“A”) represents yield quality, the numeric grade reflects overall meat quality and marbling. Premium Japanese A5 Wagyu typically falls within BMS scores 8–12, with BMS 11–12 representing the highest level of marbling and luxury.
